It’s time for some FOOTBALL food!!
Yes, I know I’m a little late. But we’ve been traveling for the first few weekends of the season, so this is our first proper lazy Sunday posted up in front of Redzone all day – just the way I like it! Of course, my favorite part of football (besides fantasy football, which I surprised even myself by being alarmingly obsessed with) is all the amazing FOOD you have a built-in excuse to eat while you park yourself in front of the couch every Sunday. Now that I’ve officially married into a Steelers family, I’m taking my responsibilities as a Lookabaugh very seriously this football season.
This carnitas pizza is my take on jazzing up one of my all-time favorite pizzas – Hawaiian! I don’t care how trashy it is, I love a good Canadian bacon and pineapple pizza all day every day. This version takes it to seriously the next level by using leftover carnitas (this is my favorite recipe, it is SOOOOOO good) instead of the Canadian bacon. We keep the pineapple for that whole sweet-salty vibe, and meanwhile, shredded white cheddar brings the tang and a hefty sprinkling of green onions brings the fresh crunch. This pizza is my dream Sunday lunch (football completely optional)!!
A good football recipe is cheesy, carby, and meaty – this one certainly checks all those boxes and then some! Do it up!
- Olive oil + cornmeal, for the baking sheet
- 1 pizza dough, homemade or store-bought (my go-to recipe is linked below)
- 1 ½ cups shredded white cheddar cheese
- 1 cup leftover cooked carnitas (my go-to-recipe is linked below)
- ½ cup diced pineapple
- 6 green onions, diced, divided
- Preheat your oven to 450°F. Coat a large rimmed baking sheet with a light layer of olive oil and sprinkle with cornmeal to prevent sticking. Drop your ball of dough into the center of the prepared baking sheet and, using floured fingers, press it out to as large of a rectangle as you can without tearing.
- Top the dough with half of the green onions, then sprinkle the cheese on, leaving about a ½ inch border around the edges. Top with carnitas and pineapple pieces. Bake for about 18 minutes, until the crust is browned and the cheese is bubbly. Remove from the oven and top with remaining green onions. Slice and serve!
