It’s no secret that I absolutely love fall food; I’m going to go ahead and say it’s my favorite food time of the year. And my favorite fall food, hands-down, is pumpkin. I have yet to meet a pumpkin food I didn’t like, from the sweet (pies, breads) to the savory (soups, sauces, pastas). Basically, as soon as the air turns one little bit chilly, I’m shoving as much pumpkin in my mouth as I possibly can, skinny jeans be damned. Besides, pumpkin has VITAMINS, okay? It’s a fruit (and yes, I just Googled that to make sure).

Perfect Panzanella Salad
Guys, GUYS. I have a problem. I’m totally, completely, and helplessly addicted. To a SALAD.
What’s wrong with me?
Before you all start freaking out, taking my temperature, and generally worrying that I’ve lost my mind, let me clarify. Panzanella is a bread salad. (“Ohhh,” you say. “That explains it.”) You take hunks of fresh bread, fry ‘em up in a skillet with olive oil/butter/both (insert sheepish grin) and toss those babies with fresh veggies, some protein if you want, and homemade vinaigrette. It’s my new favorite summer meal, a perfect blank canvas with a whole world of possible combinations and customizations. Sometimes it is a struggle to make anything else for dinner, because I just. Want. Panzanella.
Banana Chocolate-Chip Pancakes
I’m a big believer in Sunday Funday, whether that means a mimosa or two over a leisurely brunch with friends, watching football all day over a giant bowl of guac, or just simply taking a few hours to watch all that trashy TV on your DVR without, you know, feeling guilty about it. Lately, our Sundays have been seemingly filled with errands/to-do’s/things that make it feel like NOT the weekend. And now that I don’t have Game of Thrones to look forward to on Sunday nights anymore (I’m a nerd, I know) I’ve been craving that little fun-day back in my Sunday. Enter: banana chocolate-chip pancakes.
Bourbon Banana Bread
Sometimes, I love living in a studio apartment. These times include:
1) When I’m vacuuming
2) When I’m writing my rent check
3) When I’m baking banana bread
Sometimes, not so much. Like when we realize we can have approximately one friend over at a time before everyone starts experiencing mild claustrophobia. Or when a NBA game AND Keeping Up with the Kardashians are on at the same time, leading to a passive-aggressive remote control battle. But anyways, back to banana bread.
