HAPPY HALLOWEEN, guys!!

I mean, how cute are these cupcakes?! Seriously. This is definitely the most Pinterest-y thing I’ve ever done in my entire life.

Anyone who knows me well can tell you that I am one of the most impatient people you’ll ever meet. I have a 2-second attention span for any craft/artsy endeavor that can’t immediately be shoved into my mouth. So I struggle a little bit with themed holidays such as Halloween. I love baking and making festive food, but the cutesy/crafty/decorative part has always been a bit elusive to me. That is: until I discovered that you could write “RIP” on a Milano cookie and in 2 freaking seconds create a Halloween cupcake graveyard. Now THAT is my kind of themed grub!

Weird (but delicious) Danish food in the kitschy “mini-Denmark” city of Solvang, CA. Give me all the meatballs and open-faced sandwiches and cabbage!

Hey guys! I’ve missed you – I’ve once again been off traveling and running around like a crazy-woman for both work and fun. Last week, we took a little road trip down the California coast and stopped in Monterey, Carmel, Big Sur, this strange kitschy Danish-themed city called Solvang, and Santa Barbara – it was absolutely amazing! I can’t believe I’ve never done the California coast drive before, and it totally blew us away. I definitely wish I was cruising down the 1 right now instead of being back to reality, but such is life, right?! Here are this week’s Foodie Favorites!

These vegan pumpkin spice muffins look incredible. These are going on my must-bake list this Fall!

I am craving a big plate of this old school baked ziti like WOAH. It’s not even Fall weather here, but it’s always baked pasta season in my world!

This right here is my ideal single-gal-for-the-night meal.

Every woman in the world who lives with their man knows what I’m talking about. It’s what we eat when our boyfriends/fiancés/husbands are traveling for business or having a guy’s night. It’s pure, selfish “me” food, and as much as we love our men, it’s always something we secretly look forward to making and eating when we get the rare single-gal-night opportunity. For me, my top single-gal meals include a lot of things that Brad will gladly eat, but doesn’t really consider a real, filling (read: meat-filled) meal: avocado toast, veggie and egg scrambles, grain bowls, anything with tons of butternut squash and/or sweet potato, and anything with the word “drizzle”. I manage to check of 3 of these boxes in this meal, so I consider this basically the ULTIMATE Meg-meal. I went all out, ladies.

Pumpkin Chia Overnight Oats

I’d like to introduce you to the least photogenic but most delicious healthy breakfast you’ll eat all Fall. Riiiiight up there. That’s the one!

These pumpkin chia overnight oats may not win any beauty contests, but they are my new favorite thing. Have you ever tried overnight oats? They are a recent Pinterest phenomenon, basically consisting of old-fashioned oats that sit in liquid overnight to soften and form a cold, sweet, healthy breakfast porridge. I have been very intrigued by them ever since I tried chia pudding last year – this peanut butter and jelly version remains one of the most popular recipes on my site! I love oatmeal and eat it almost every morning because I am a boring grandma, but I wasn’t sure how COLD oats would turn out…I mean, the idea of cold, gloppy oatmeal is not exactly appetizing, right?
