To me, a house just isn’t a home until you’ve baked a loaf of banana bread in it.

Banana bread was the very first post I ever did for a reason – it is, hands-down, my favorite baked treat to make. It’s incredibly forgiving and requires only one bowl to throw together; it’s so cozy, comforting, and just always hits the spot. I have many versions of banana bread here on my site, but there’s always room for one more, right?! A new banana bread for our lovely new home!

Coconut Oil Banana Bread

Do you ever see a recipe (in a cookbook, online, on a menu, wherever) and you just absolutely have to drop everything and make it RIGHT THEN?

This is a result of one of those moments.

OK fine, I saw this beauty a few weeks ago, but this was the very first opportunity I had to bake something, so for me, that’s a pretty darn quick turn-around. As a food blogger, I have a looooong list of recipe ideas and a significant backlog of things I want to make. But I wasn’t feeling inspired for my post this week until I started thinking about exactly what I really wanted to eat. I was craving something cozy and sweet but not overly indulgent, something that I wouldn’t feel terrible about eating (especially before the pending Thanksgiving onslaught) but also would satisfy me and make me feel warm and fuzzy inside the way really only a fantastic baked treat can. I wanted this coconut oil banana bread and, backlog be damned, I was going to make it!

Hey guys! How’s your week going? We got hit by a major blizzard over the weekend (5th largest in Chicago history, woo-hoo!) and yet still made it out for the Super Bowl. If I’m not a real Midwesterner at this point, I give up! Hope you stayed safe (and warm!) in all this crazy winter weather. Here are this week’s Foodie Favorites!

Afternoon beer just might be the greatest idea ever. Such a classy excuse for day drinking!

I am always on the lookout for new granola recipes to try, and this simple coconut oil granola looks fantastic! I haven’t tried making granola with coconut oil, and I think it’s about time I start.

Elvis Banana Bread

Okay, so this is basically the most ridiculous thing I’ve ever made in my entire life.

And I am not sorry about it one little teeny tiny bit.

It’s already two weeks into January, which means we have SUFFICIENTLY repented for the indulgences of December. It’s totally time for some peanut butter banana bread topped with a peanut butter glaze and brown sugar-candied bacon. Right? Work with me, people.
