Hi friends! I think I’ve just about recovered from our action-packed (and completely amazing) trip to Hawaii last month. Since I just did a travel post about our trip to Australia, I figured this time I’d pay tribute to our vacay by bringing a piece of our trip back via the kitchen. One of my absolute favorite things about Hawaii (besides the poke, the hiking, and the incredible views) is the abundance of amazing fresh fruit. I could never get sick of all the fresh mango and pineapple and guava juice! I think I started pretty much every day of our trip with either yogurt and granola and fresh fruit, or my new favorite discovery – pitaya breakfast bowls.

Hello from the other side (of moving)! I kept trying to find an hour or two to post these bowls of sunshine this weekend, but between packing, moving, unpacking, organizing, and watching the season premiere of Game of Thrones (priorities!!) that hour just never materialized. Coconut Oil Banana Bread
Do you ever see a recipe (in a cookbook, online, on a menu, wherever) and you just absolutely have to drop everything and make it RIGHT THEN?
This is a result of one of those moments.
OK fine, I saw this beauty a few weeks ago, but this was the very first opportunity I had to bake something, so for me, that’s a pretty darn quick turn-around. As a food blogger, I have a looooong list of recipe ideas and a significant backlog of things I want to make. But I wasn’t feeling inspired for my post this week until I started thinking about exactly what I really wanted to eat. I was craving something cozy and sweet but not overly indulgent, something that I wouldn’t feel terrible about eating (especially before the pending Thanksgiving onslaught) but also would satisfy me and make me feel warm and fuzzy inside the way really only a fantastic baked treat can. I wanted this coconut oil banana bread and, backlog be damned, I was going to make it!
Bourbon Banana Bread
Sometimes, I love living in a studio apartment. These times include:
1) When I’m vacuuming
2) When I’m writing my rent check
3) When I’m baking banana bread
Sometimes, not so much. Like when we realize we can have approximately one friend over at a time before everyone starts experiencing mild claustrophobia. Or when a NBA game AND Keeping Up with the Kardashians are on at the same time, leading to a passive-aggressive remote control battle. But anyways, back to banana bread.
