Happy (almost) St. Patrick’s Day! I haven’t missed a St. Patrick’s Day celebration since I started blogging almost 5 years ago, and I don’t intend on starting now. This year is extra special, because I finally did 23 and Me and learned that I am almost entirely British/Irish. This definitely explains why I love beer so much, right?!

Sweet Potato Bacon Breakfast Tacos
I present to you Sweet Potato Bacon Breakfast Tacos, a.k.a. the time I took a healthy vegetable and fried it in a full inch of bacon fat and called it breakfast.
For the record, I regret nothing.
See, we’re really into breakfast food ‘round the clock around here. We eat black bean breakfast burritos (my super-simple weeknight dinner specialty, if I do say so myself) or veggie-loaded egg scrambles for dinner at least once a week. Literally the only thing that Brad knows how to make is an buttery egg-and-cheese breakfast sandwich. It’s safe to say we are egg-and-cheese devotees, so when I realized the other day that I’d never tried my hand at an epic breakfast taco, my food-blogger mind started churning on overdrive.

Farro and Black Bean Burrito Bowls
Phew. I don’t know about you guys, but this weekend was a BIG eating weekend. And a big beer-drinking weekend. And a big happy-times-outside-not-too-productive weekend. It was totally awesome and exactly how a holiday weekend is supposed to be, but as always after a vacation or holiday, I am feeling greatly in need of a few days that don’t involve stuffing my face with enormous oatmeal chocolate chip cookies. We all need a few of those days every now and then, even those of us (ahem) who write food blogs about bacon. It’s all about the balance here.
