This right here is totally my middle-of-Februrary dregs-of-winter love food.

It has so many warm and hearty winter-y things all in one (Spicy sausage! Kale! Whole grains! Squash!) and it’s so comforting and filling and cozy and actually quite healthy. Because we’ve all been sitting around in the cozy indoors on our couches watching movies and drinking wine and eating pizza in our sweatpants for weeks on end, right? And maybe we could all use some healthy comfort food love? (Please, please tell me it’s not just me?!)

Bacon, Kale, and Caramelized Onion Quiche with Buttermilk Oat Crust

It’s January 4^th, which means that well-intentioned resolution-makers are busy strapping on their FitBits, busting their ass at those pilates classes, and eating kale like it’s goin’ out of style.

Unless you’re me and you broke your toe by running into a couch on the last day of 2014 and you’re spending a whole lot of time with your bffs sweatpants and remote control. That’s cool too, right?

At least I have the kale part.

Hi everyone! How’s your week going? Are you already planning out your Thanksgiving menus, too? If you need any ideas, may I suggest pumpkin pie? Or the best broccoli casserole ever? Or some homemade dinner rolls? Or pancetta mac n’ cheese perhaps? OK I’ll stop. I’m just so excited! My mom and I have finalized our menu and I’ll be putting together a shopping list this week. Butternut Squash and Bacon Pizza

This is my absolute perfect winter pizza.

And by that I mean it’s my perfect how-is-it-still-zero-degrees-on-March-2nd pizza.

I can’t look ahead to asparagus and artichokes and other signs of spring. I can’t think about bathing suits or sunshine or Vitamin D. It’s just too painful. Let’s just hang out here, in our PJs in the middle of the day (because obviously we haven’t been outside yet), gazing out of our snow-filled windows and eating butternut squash and bacon pizza. This is my happy place right now.
